There are a lot of exciting things happening on the farm this year. We have spent the last two years during the pandemic looking to see what would best suit our guests and be something Grace and I (Ruthie) could maintain (Thomas still works full time+ off the farm). We have discovered several things: people want to know where there food comes from, they enjoy clean, hearty but healthy food, folks enjoy the break from life while visiting the farm, they need convenient prepared meals as well as some dine in options. So here we go!
This spring we will be featuring the Loft creations that are inspired by the beautiful milk of our Dew Line Dairy. We incorporated the dairy in December of 2020 and are now a certified micro dairy. Grace manages all of the dairy operations from growing the hydroponic barley fodder, feeding the cows, hand milking and pasteurizing. I manage the Loft, menus, meals and pastry orders. Together we run the day to day operations of the farm switching from the farm to kitchen as needed. It is a pleasure to get to work together and grow the farm to what is is today.
So, what made the menu? We happy to say the hand rolled gnocchi and lasagna are a hit. We are making pans of the hand rolled ricotta gnocchi with slow simmered meat sauce. The beef is sourced from our friends at Ratchford Farms right here in Searcy County. We will have seasonal sauces as available from the farmers market and other local farmers.
Our hand rolled lasagna is stuffed with layers of our own ricotta, mozzarella farm and fresh eggs. These are packaged in Aluminum pans that can be heated in the oven or in your skillet over the campfire. Perfect for your weekend getaway. Sides of meat sauce and fresh ricotta are also available As well as fresh greens from our friends at Schot’s Slopes Farm.
We also offer some prepared breakfast items to keep your weekend easy. Our farm favorite- Baked Oatmeal loaded with hearty oats, fruit and nut flours (ask us for nut free if needed). The Farm Hand Breakfast Bake is another favorite. Our fresh eggs, toasted butter milk biscuits and cheese make a filling breakfast to start your day. Need something a little sweet? Try the Italian ricotta cheesecake. It’s perfect for breakfast or afternoon snack. Watch our Facebook and Instagram for specials.
We will have new hours too. The farm will have stock of the above items and you can call ahead any day to schedule pick up. The farm store will be open on Wed. & Thurs. 11am - 5 pm, Fri 11-8, Sat. 9-12. We will have our pastry case filled on Fridays and Saturdays through the summer. Call ahead to order whole pies: buttermilk or cannoli. Watch our Facebook page for what’s happening on Fridays.
