Peach season is upon us. What are you doing with all the peels?? How about a quick peach syrup that you can save for a while!
Just save you peels and worry about them when your done with the recipe your working on at the moment.
Put the peels in an appropriate size pot. Cover them with water and put over low heat.
Simmer over low, replenishing the water 2-3 times until the skins are blanched and liquid is darker.
Pour the juices through a strainer and measure. Add an equal amount of sugar and bring to a simmer over med-low heat.
Check the thickness of the syrup.
At first it will be thin and runny. Continue to heat slowly bringing to a low boil.
